PPTI Fun Recipes of the Week (Open House - June 17, 2013)


Theme of the Week: Chinese

CHINESE LUMPIA

Ingredients:
Carrots- shredded
Baguio Beans- sliced thinly
Towka- sliced thinly
Cabbage- sliced thinly
Chopped garlic
Minced Pork
Chopped shrimps

Procedure:
In a wok, heat oil, sauté garlic and minced pork until cooked. Then add the shrimps and cook. Add all other ingredients. Put salt to taste. Cover until all vegetables are well done.

 ADD ON
-          Chopped/crushed garlic
-          Chinese parsley
-          Lettuce
-          Scrambled egg
-          Chopped peanut mixed with sugar
-          Lumpia wrapper- large
-          Lumpia sauce

Lumpia Sauce:
Caramelize the sugar. Add water & soy sauce, and then put cornstarch until sauce is thickened.


CHILI WINGS




Chicken wings

Garlic chopped
Chili garlic sauce
Soy sauce
Sugar
Green onions and wansuy to garnish

Procedure:
-Pre heat the wok or electric skillet at 230 degrees for 7 minutes.
-Cook the garlic then add the chicken wings. Sauté.
-Add, chili garlic sauce (depends how HOT you like your wings)
-Add soy sauce, sugar.
-Cover until vapo valve clicks, then lower the heat to 150
-Another click, open the lid, and continue cooking until the sauce is almost dried up.
-Garnish with chopped green onions and parsley.
-Serve.



MAKI MI

Soup stock
Pork tenderloin
Garlic
Soy sauce
Cornstarch

Procedure:

Put soup stock in a casserole then let it boil. Drop pork tenderloin coated with soy sauce, cornstarch and garlic then cook until pork is tender. Thicken with AA powder with water until desired consistency.


STEAMED SPARERIBS

Spareribs, cut into small pieces
Black beans, chopped
Sesame oil
Sugar
Rice wine
Green onion
Wansuy

Procedure:

-In a bowl, add all ingredients except green onions &wansuy
-Mix well
-Place in a  5 quarts roaster under medium heat
-When the vapo valve clicks, lower temperature until meat is tender
-Then open the lid & cook for last 5 minutes under high heat until all juices from meat dries up a bit
-Serve & garnish with green onions &wansuy
